Panamanian Carimañolas – Stuffed Yuca Fritters Recipe

A Very Short About Carimañolas:

Carimañolas is Latin American dish. It is a traditional and typical Panamanian food. We Panamanians eat our carimañolas for breakfast, as a very popular fast food.

Ingredients:

  • 1 pound of yucca
  • ½ pound ground beef
  • 3 sweet ajies
  • 1/2 half onion
  • 3 garlic
  • a sprig of coriander or culantro
  • 1/2 teaspoon of pepper
  • 1 tablespoon salt
  • 2 tablespoon of tomato sauce
  • 2 tablespoon soy sauce
  • 1/2 cup cornstarch

Prep time: 20 min.  Total time: 1 h 30 min.  Servings: 2 – 3

Directions:

Peel the yuccas, divide them into pieces, wash them, and put them in a pot to boil for 25 minutes.

Once ready, while still hot, convert them into a puree. Once the temperature drops a little, make the dough. Using a little vegetable oil, place it in your hands so that it does not stick, knead the dough a little and add a little cornstarch. Once ready, let it cool.

Cut all the vegetables into small pieces and liquefy them. Once ready, add a ¼ smoothie to the ground meat, and add the salt and pepper and soy sauce. Mix everything. In a pan, add two tablespoons of oil. Stir-fry for 5 minutes, then add ½ cup of water and the two tablespoons of tomato sauce. Let it boil for 10 minutes. Let the sauce dry a little and turn it off. The meat is ready for filling.

Once the dough is cold, put the oil on your hands and make small balls like making an omelet. In the middle, make space for the meat. Place a spoonful of meat and close the dough. Put the cornstarch at the end so that the carimañola does not stick.

Once ready, place enough vegetable oil in a pan to fry them. When the oil is very hot, start frying. Once they are a little golden on both sides, take them out and drain on paper towel.

Note: You can add a little salt to the dough to taste if you wish. If you eat it with a sauce that contains salt, it is not necessary to add salt to the yucca dough.
