Panamanian Chayote Salad

This tropical salad with its exquisite taste and rich flavor is a refreshing dish that stars chayote, a member of the gourd family. Along with chayote, the Panamanian people like to add other veggies like broccoli, cauliflower, carrots, beans, etc. to ensure that it tastes wonderful and is also healthy!

Ingredients:

  • 3 chayotes
  • • 2 large carrots
  • A bouquet of broccoli
  • A bouquet of cauliflower
  • 11 ounces / 300 grams of beans
  • 3 tablespoons mayonnaise
  • Salt 3 teaspoons
  • Salt to taste
  • Pepper to taste

Directions

In a pot of water, place the chayotes with their shell and previously washed carrots to boil. Let the carrots cook for 20 minutes and then remove them. Let the chayotes cool for 10 more minutes until they are soft. Take them out and also let them cool. Then peel the cooked carrots and chayotes and chop them. Place them aside for the salad.

Next, add a teaspoon of salt to a pot of water and bring to boil. Once it boils, add the broccoli that you’ve washed and chipped and boil for 3 minutes. After 3 minutes, strain the broccoli and put it in ice-cold water to stop cooking before straining it again. Set it aside for the salad.

Then add a teaspoon of salt to a pot of water and bring to a boil. Once it’s boiling, add the cauliflower that you’ve washed and chipped. Cook for 15 minutes. Once ready, strain it and set it aside for the salad.

In a pot of water, add a teaspoon of salt and bring to a boil. Once it boils, add the green beans and cook for 20 minutes. Once cooked, strain them and then put them in ice-cold water. Once they’ve cooled, strain the beans and set them aside for the salad.

Once all the vegetables are ready mix together with 3 tablespoons of mayonnaise, salt, and pepper to taste in a salad bowl.

Your super delicious and nutritious salad is ready!
