Panamanian Sancocho Recipe

Sancocho is a traditional dish in Panama. It can be found in all countries throughout Latin America with minor variations, but Panamanians swear that theirs is the best. Ingredients:

  • Half of a fresh chicken
  • ½ onion
  • 5 cloves of garlic
  • 5 sweet red or green chili peppers
  • 5 leaves of culantro
  • ½ of a teaspoon of peppercorns
  • 1 teaspoon of oregano
  • chicken bouillon cube (optional)
  • 10-inch yucca
  • 10-inch Yam (ñame)
  • 2 Otoe

Prep time: 30 min.  Total time: 1 h 00 min.  Servings: 4

Directions:

Mix a teaspoon of salt, a half teaspoon of pepper and 5 crushed garlic cloves with the chicken.

Boil 10 cups of water in a pot.

Sauté in two tablespoons of vegetable oil.

Then, when the water is boiling, add the chicken and cook for 5 minutes, then add all the vegetables (except the yucca, ote, and yam).

After 10 minutes has past, add the yucca to the soup.

Wait another 10 minutes and then add the ote and yam.

In 20 minutes, if they are soft, the vegetables are ready.

Remember to add salt to taste.
