Tropical Beet Salad – Ensalada De Feria Panameña

This dish is basically a colorful and easy to prepare classic potato salad that floods your taste buds with rich and satisfying flavors. The salad is a favored dish in Panama in summer and can be found at any folk festival or fairground. The Ensalada De Feria Panameña is both fresh and easy to prepare which makes it a perfect side dish for whenever you are planning on hosting a BBQ this summer!

Ingredients:

  • 4 medium potatoes
  • 2 medium beet
  • 2 eggs
  • 1/2 onion
  • 1 carrot
  • a branch of celery
  • 1 small can of sweet peas
  • a branch of parsley
  • 3 spoons of mayonnaise
  • 1 lemon
  • salt
  • pepper to taste

Prep time: 20 min  Total time: 1 hr 15 min.  Servings: 6

Directions:

In a pot, boil the beets, and in another pot, boil the potatoes and carrots. Cook all the vegetables for 20 minutes. Also boil the two eggs for 12 minutes.

Chop the onion and celery into small squares and finely chop the parsley. Then mix the chopped onion with the celery and sprinkle a lemon. Let it stand.

Once the eggs are ready, remove the shell, divide them into squares and set aside.

Once the beets are ready, remove them from the heat and let them cool slightly. Peel and chop them into small squares and set them aside.

Once the potatoes and carrots are ready, remove them from the heat and let them cool a little. Peel and chop, and then put them into a small bowl. Once all the ingredients are ready and in a bowl, add the potatoes, carrots, beets, chopped eggs, and the onion and celery that had rested in lemon juice. Add salt and pepper to taste and the 3 tablespoons of mayonnaise and the sweet peppers. Mix everything, and finally, add the chopped parsley.

Traditionally we accompany this salad with delicious rice and chicken and caramelized sweet plantains.
