Tropical Breaded Sierra Fish – Panamanian Style

The Sierra fish (Spanish: Mackerel) is known for excellent flavor – similar to Jacks but more delicate. It is found along the eastern-central Pacific from Southern California to the northern tip of Chile. It is very popular in Panama as a national dish.

Ingredients:

  • 1.5 lb Sierra fish fillet
  • 2 lemons
  • 1 teaspoon white vinegar (optional)
  • 1 tablespoon of curry
  • 1 tablespoon of oregano
  • 1 teaspoon of salt
  • ½ teaspoon pepper
  • 2 cloves of garlic
  • 1 green pepper
  • ¼ parsley
  • ¼ of scallion
  • ½ an onion
  • 2 leaves of culantro
  • ½ habanero
  • 1 cup of flour to bake
  • Vegetable oil

Prep time: 30 min.  Total time: 13 h 30 min.  Servings: 2

Directions:

Wash the Sierra fish fillets and season with salt and pepper, oregano, two minced garlic, and a tablespoon of curry. Add the juice of two lemons and then mix everything. Cover with plastic film and refrigerate overnight.

Finely chop all the vegetables: scallion, onion, green pepper, parsley, culantro and habanero. Remove the fish from the refrigerator and cover with chopped veggies. Place in refrigerator for one hour. 

One at a time, dip each fish into flour, pressing firmly.

Once breaded, deep fry in hot oil until golden brown on both sides.
