Pargo Rojo Panameño is favorite seafood dish among the people of Panama. This dish tastes nothing short of heavenly and is a full meal in itself. So if you have guests coming to your home and you wish to show off your culinary skills by serving them something that is an authentic Panamanian dish, then go for the Tropical Fried Red Snapper! I promise it will be a hit!
Ingredients:
- 1 pc Whole Red Snapper
- 2 Tablespoon Paprika
- 4 Garlic
- 1/2 Teaspoon of Salt
- Pepper
- 1 lemon
- 6 Tablespoon of Flour
- Vegetable Oil
- 2 Green Plantains

Directions:
Make diagonal cuts and split a 2-pound fresh red snapper, which has been previously cleaned, in half so that it fits in the pan.
Optional: You can buy a smaller fish and adjust the ingredients to the size of the fish.
Add the lemon juice, crushed garlic, salt and pepper, and cover it, letting it rest for half an hour in the fridge.
Prepare the flour by mixing it with the paprika and salt and set it aside.
Prepare the plantains by making a long cut. Peel and cut them into thick slices (3/4 to 1 inch). Prepare a skillet with plenty of oil over medium heat for frying the plantain.
When the plantain slices change color and they are soft, remove them from the oil, drain on paper towels, and lower the temperature of the oil. Then use a small press to crush them. Once ready, fry the pressed plantains.
Heat the oil over high heat to 375°F. When it is very hot, add the crushed plantains, one minute on each side until they are golden brown and crispy. Remove them from the oil and drain on paper towels. Add salt to taste.
Note: Plantains taste good with ketchup.
Take the fish out of the fridge, pass it through the flour, and cook on both sides until golden brown, 4 to 5 minutes on each side, depending on the size of the fish. Once ready, drain on paper towels.
