Tropical Turkey – Pavo Panameño

In Panama, there are a lot of ex-pats from the U.S. who celebrate Thanksgiving. Because they have been in Panama for so many years, Panamanians have assimilated some of their customs into the local culture. Some Panamanians also celebrate Thanksgiving with the turkey. Panamanians also prepare turkey for Christmas. Read on to see how they do it.

Ingredients:

  • 1 entire Turkey (16LB)
  • Butter 3/8 lb (3/4 cup)
  • 1 head + 3 cloves of Garlic
  • 1 Onion
  • 1 spring of Thyme
  • 1 spring of Rosemary
  • 2 Lemons
  • 2 Golden Apples
  • Pepper
  • 3 tablespoons of Olive Oil
  • 1 cup of Wine
  • 1/4 cup of Salt

Directions:

First, defrost the turkey. It takes 1 day for each 5 lbs of meat to defrost it. So, 16 lbs takes approximately 3 days to defrost. Keep the turkey in the refrigerator while defrosting! After 3 days, marinate the meat with all the additional ingredients.

Zest two lemons. Reserve them for later.

Add the bar and a half (3/4 cup) of butter into a bowl, adding a little rosemary and thyme, then melt the butter in the microwave. Next, add the pepper and salt to taste, 3 crushed cloves of garlic and the zest of the two lemons.

First, distribute the olive oil throughout the turkey, then add all of the butter mixture, massaging it all over the turkey. Once it is ready (you can add wine before or after), cover with plastic foil and leave to marinate in the fridge for a day and a half.

Once the marinating process is complete, fill the interior of the turkey with the two golden apples, washed and chopped into small square pieces, two yellow lemons that have been split into four pieces, the onion that has been cut into squares, and the garlic head, which should have been cut in half. Then add the thyme and rosemary sprigs, and tie the turkey, and sprinkling it with semi-sweet white wine all over and cover it with aluminum foil.

Insert the turkey into the oven preheated to 380 degrees, and leave it for 3 and a half to 4 hours. Prior completing the cooking time, uncover it 20 minutes before so it browns on the outside.
