Tropical Upside Down Cake – Volteado De Piña Panameño

This cake is extremely delicious! Panamanians make it for birthdays and holidays.

Ingredients:

  • 1 1/2 cup sifted flour
  • 2 teaspoons of baking powder 
  • 1 cup white sugar 
  • 1 cup brown sugar 
  • A teaspoon of vanilla 
  • 2 unsalted butter bars (8 oz./226 g)
  • A large can of pineapple slices and its juice 
  • A 10 oz jar of cherries 
  • 3/4 cup pineapple juice 
  • 2 eggs 
  • a pinch of salt

Total time:  1hour 20 min

Directions:

To a 9-inch mold, add a melted butter bar and a cup of brown sugar. Mix it really well, then add the 7 slices of pineapple. In between the pineapples, place the cherries. Once the decoration is completed, prepare the sweet mixture. 

Sift the cup and a half of flour, place in a bowl, add the butter bar, and smoothly beat well. Then add the sugar, followed by the two beaten eggs. Next, add the can of the pineapple juice left over from the pineapple slices. Mix and gradually add the flour. While mixing, add the two teaspoons of baking powder, then the teaspoon of vanilla and the pinch of salt. Once it is mixed well and ready, add it to 9- inch mold with a spatula and even it out. 

Place in the center of the oven, preheated to 350 degrees. Bake for 55 minutes.

Once 55 minutes have passed, insert a knife. If the knife is clean, your cake is ready. 

Let it stand for 5 minutes and then turn it over.
