Tropical Bacalao With Potato – Bacalao Con Papas

Bacalao Salads are the best summertime meal! This magical mixture of salted fish and potatoes will cool down your body like no other dish.  Bacalao refers to salted and dried fish which is then combined with other ingredients like olive oil, tomatoes, and onions to give it a rich flavor. This recipe is the potato version of bacalao, which is a traditional food found in the Caribbean.

Ingredients:

  • 1 pound of cod 
  • 3 medium potatoes 
  • 3 peppers (red, green, yellow)
  • 1 medium onion 
  • 5 cloves of garlic 
  • 1/2 cup tomato paste 
  • Pepper to taste 
  • 2 tablespoons olive oil

Prep time:   40 min.  

Total time:  36 hours 40 min

Directions:

 To desalinate the cod, put it in fresh water for 24 hours in the fridge. After 24 hours, change the water and leave it again in fresh water for 6 hours, after these 6 hours, change the water again and leave it for 6 more hours. After 36 hours, the cod is ready to cook.

The medium potatoes are boiled for 20 minutes. 

Julienne an onion, chop the three peppers, dice tomato and the mince the garlic. 

After 20 minutes, strain the potatoes and let them rest and then peel them and divide them into medium squares.

Put boiling water to cook the cod, once the water boils, add the fish, let it cook for 7 minutes and strain the water. Let it rest for a few minutes to extract all the bones. 

In a pan, place two tablespoons of olive oil over medium heat. Once hot, add the garlic, stir without burning, then add onion, then mix the peppers, tomatoes. Stir everything very well, add two tablespoons of tomato paste, add 1/2 cup of water. Stir well, add all the cod, add the remaining two tablespoons of tomato paste and potatoes. 

Stir very well, add pepper to taste and half a cup of water let cook for 10 minutes and that’s it!

Note: The desalination time will depend on whether the cod parts are thicker or thinner. Remember – 48 hours and then twice every 6 hours change the water. Thinner slices – 24 hours and two water changes every 6 hours. Add pinch of salt if necessary at the end of the recipe.
