Tropical Yellow Cherries Pudding – Pesada de Nance

This yellow cherry pudding tastes delicious, and can be served either warm or cold, with crumbled salty queso fresco on top. It is also a quick and easy-to-make dish. The pudding is cooked in smooth cream and is prepared with the fruit ‘nance’ in it. And did I mention that it tastes yummmmy?!

Ingredients:

  • 1.7 lbs of Yellow Cherries
  • 3/4 cup Flour
  • 1/2 cup of Brown Sugar
  • 1 can of Evaporated Milk
  • 3 cups of water
  • Pinch of Salt (option)
  • Cottage Cheese for Decoration

Directions:

Wash the yellow cherries and blend in two cups of water, little by little, to release the pulp, then separate out the seeds. Place the brown sugar in a pot with a cup of water over medium heat to dilute. Once diluted, mix in the yellow cherry juice and place the mixture over low heat.

Dilute the flour in a little water. Once ready, add it to the yellow cherry mixture. Stir constantly so it does not stick. When it begins to thicken, add the can of evaporated milk, then stir and cook it for 5 minutes.

You can add cottage cheese if you like. You can eat your nance warm or you can eat it cold.

Enjoy!

Note: Instead of brown sugar, you can use white sugar or honey.
